- 2 tbsp ginger purée (30 ml)
- 1/2 yellow onion
- 4 tablespoons water (60 ml)

- 11 burrito tortillas
- 4 tbsp honey (60 ml)
- 1 tbsp rice vinegar (15 ml)
- 1 tbsp toasted Sesame oil (15 ml)
- 240g sushi rice (dry weight) (8.47 oz)

- 2 tbsp dark soy sauce (30 ml)
- 3 tbsp gochujang (45 ml)

- 50g sriracha (1.76 oz)

Trim and toss the top sirloin in the freezer for about 30 minutes, then slice as thin as possible.

Soak the meat in a mixture of baking soda and water for about 10 minutes.
