👨‍🍳 Instructions

  1. 1

Start by washing and soaking your rice for 15 minutes.

  2. 2

To make the Jollof paste, heat oil in a pan or your rice cooker pot. Add the red chilli, garlic, onion, red bell pepper and tomatoes. Season with salt, turmeric, ground coriander and paprika. Cook everything down for at least 15 minutes, until the vegetables are soft and cooked through. Blend into a smooth paste.

  3. 3

Take around ½ cup of the paste and toss it with your paneer, making sure every piece is coated.

  4. 4

Add the remaining paste back to your rice cooker pot, followed by the sliced mushrooms. Sauté for a couple of minutes.

  5. 5

Add the soaked and drained rice, vegetable stock, honey and salt to taste. Mix well, close the lid and cook for around 15–18 minutes, or until the rice is cooked through. Cooking times may vary depending on your rice cooker.

  6. 6

While the rice cooks, pan-fry your marinated paneer until golden, if desired. Serve it over the Jollof rice and enjoy!

💡 Pro Tips

  • ✓
Blend your Jollof paste immediately after the 15-minute cook-down while vegetables are still hot (above 160°F), as heat breaks down cell walls and reduces blending resistance by up to 60%, preventing a gritty final texture.timing160°F|immediately after cooking
  • ✓
Toast your spices (turmeric, coriander, paprika) in the hot oil for 45-60 seconds before adding vegetables to bloom their essential oils and increase flavor intensity by 3-4x through Maillard reaction activation.technique45-60 seconds|3-4x flavor intensity
  • ✓
Maintain a 1:1.5 ratio of paste to rice by volume (not weight) because Jollof paste contains 65-70% water that will hydrate the rice; using more paste risks mushy, over-hydrated grains.ingredient1:1.5 paste-to-rice ratio|65-70% water content
  • ✓
After adding soaked rice to the pot, stir vigorously for 30 seconds to distribute paste evenly and prevent starch from forming gelatinous pockets that create uneven texture; then avoid stirring during the 15-18 minute cook to preserve individual grain structure.technique30 seconds initial stir|no stirring during cooking
  • ✓
Soak rice for exactly 15 minutes (not longer) because extended soaking over 20 minutes causes amylose leaching that reduces starch viscosity and makes grains collapse into porridge rather than stay firm.timing15 minutes maximum|amylose leaching risk after 20 minutes
