👨🍳 Instructions
- 1
Sauté onion in a pan with some olive oil, then add beef mince and cook until browned. Season well and set aside to cool.
- 2
Add flour, salt, yoghurt, olive oil, milk and baking powder to a food processor or Thermomix. Blitz until a dough forms.
- 3
Transfer to a floured surface and gently bring the dough together with your hands.
- 4
Roll into a rectangle approximately 50 x 30cm.
- 5
Spread with tomato paste, squeeze over American mustard, then top with pickles, cooled beef and 1–1.5 cups of grated cheese.
- 6
Roll into a log and slice into 12 scrolls.
- 7
Place on a baking paper-lined tray and sprinkle with the remaining cheese.
- 8
Bake at 180°C for approximately 17 minutes, until golden and cooked through.
💡 Pro Tips
- ✓Cool the beef filling to below 20°C before spreading on dough because heat will cause the yogurt proteins to denature and create a greasy, separated filling that won't adhere properly during rolling.timingBelow 20°C
- ✓Maintain a 1:1 ratio of yogurt to milk (100g:120ml here, roughly 45% yogurt solids) because this balance creates a tender crumb through lactic acid tenderization while the milk provides hydration for gluten development without making dough sticky.ingredient1:1 yogurt-to-milk ratio (45% yogurt solids)
- ✓Roll dough to exactly 50×30cm and let it rest for 3-4 minutes before filling because gluten relaxation reduces spring-back and allows even filling distribution; skipping this causes uneven scrolls and hollow centers after baking.technique50×30cm, 3-4 minute rest
- ✓Slice scrolls with a sharp, wet knife using a downward saw motion (not pressing down) to prevent compressing the layers and sealing edges, which traps steam and causes pale, dense interiors instead of a flaky, golden crust.technique
- ✓Bake at 180°C for 17 minutes on the middle oven rack because self-raising flour releases CO₂ rapidly at this temperature, requiring quick heat to set the crumb before gravity collapses air pockets; too low causes dense scrolls, too high burns edges before centers cook through.timing180°C, 17 minutes, middle rack
