💡 Pro Tips
- ✓Bloom your tomato paste in the pan for 1-2 minutes after adding it before incorporating flour—this concentrates umami compounds and removes the raw, acidic taste that can dominate the filling.technique1-2 minutes
- ✓Cook your flour roux for exactly 2-3 minutes after adding it to develop a light blonde color, which provides enough gelatinization (about 25-30% of starch) to thicken without creating a gluey, overcooked gravy.timing2-3 minutes, 25-30% starch gelatinization
- ✓Reduce the filling to a gravy consistency where it coats the back of a spoon and a line drawn through it on the spoon doesn't immediately close—this prevents a soupy pie that won't set properly and indicates a sauce thickness of approximately 180-200 centipoise.technique180-200 centipoise viscosity
- ✓Add frozen peas and carrots in the last 2 minutes of simmering rather than earlier, since they release moisture (about 8-10% of their weight) that will thin your gravy if cooked longer.timing2 minutes, 8-10% moisture release
- ✓Use a 2:1 ratio of beef consommé to flour (10.5 oz consommé with 2 Tbsp flour = approximately 0.88 oz flour) to achieve the ideal sauce weight without requiring excessive reduction time.ingredient2:1 liquid-to-flour ratio
