💡 Pro Tips

  • ✓
Press your extra-firm tofu to 40-50% of original weight before slicing by wrapping in cheesecloth and applying 2-3 lbs of weight for 30 minutes, which removes excess moisture that prevents browning and allows the marinade to penetrate deeper.technique40-50% weight reduction, 30 minutes
  • ✓
Slice tofu to exactly 1/4-inch thickness and space slices 1/2-inch apart on the baking tray to ensure even air circulation and Maillard browning at 200°C without steaming.technique1/4-inch thickness, 1/2-inch spacing
  • ✓
Flip tofu at the 12-13 minute mark (not halfway) because the first side needs extra time to develop a crust before the second side is exposed to direct heat.timing12-13 minutes for first flip (vs. 15 minutes)
  • ✓
Increase oven temperature to 220°C for the final 5 minutes after flipping to accelerate Maillard reaction and achieve a darker, crispier exterior without overdrying the interior.equipment220°C for final 5 minutes
  • ✓
Balance your agave-tamari glaze to a 1:2 ratio (0.5 tbsp agave to 1 tbsp tamari) because agave's hygroscopic properties at 200°C draw moisture to the tofu surface, preventing proper crisping—less sweetener allows better browning.ingredient1:2 agave-to-tamari ratio
