💡 Pro Tips
- ✓Brown your 85% lean ground beef without added fat at 375°F for 3-4 minutes, stirring frequently, because the 15% fat content renders sufficiently to create a fond without excess grease that would make the frozen stack soggy upon thawing.technique375°F, 3-4 minutes, 15% fat content
- ✓Remove seeds and excess juice from tomatoes before chopping because their 95% water content will create a wet filling that separates during the 3-month freeze, compromising texture when thawed.ingredient95% water content
- ✓Press down each layer firmly with a spatula to achieve 1/4-inch compression, which reduces air pockets by ~60% and allows proteins and starches to form a cohesive structure that won't crumble when you unmold the frozen stack for baking.technique1/4-inch compression, 60% air pocket reduction
- ✓Thaw your stack in the refrigerator overnight (12-16 hours minimum) rather than at room temperature because slow thawing allows ice crystals formed during freezing to reabsorb into muscle fibers instead of draining away, retaining up to 15% more moisture.timing12-16 hours, 15% moisture retention
- ✓Combine your spice blend (chili powder, cumin, garlic and onion powders) with the raw beef before cooking to allow the spices' aromatic oils to distribute evenly and hydrate slightly, creating more uniform flavor distribution than adding post-browning.techniquePre-mix spices with raw meat
