👨‍🍳 Instructions

  1. 1

Optional - microwave the potatoes covered with a splash of water for 4-5 mins. Drain and pat dry.

  2. 2

Season with the ingredients listed then airfry at 200C for 14-15 mins or bake at the same temperature for 18-22 mins. If you haven’t microwaved they’ll need longer.

  3. 3

Add the chicken to a pan, then season with the ingredients listed, salt & pepper. Fry until almost cooked through.

  4. 4

Add the butter to the same pan. Once melted, add the chopped garlic and cook for around 30 seconds. Add the tomato purée & cook for another 30 seconds.

  5. 5

Add all of the other sauce ingredients with a small pinch of salt. Stir and simmer until the chicken is cooked and the sauce has thickened.

  6. 6

Divide the potatoes between two bowls, then spoon over the creamy cowboy butter chicken.

  7. 7

Finish with extra parsley, a fine grating of Parmesan and a little black pepper.

💡 Pro Tips

  • ✓
Microwave potatoes for 4-5 minutes before air-frying to reduce total cooking time from 18-22 minutes to 14-15 minutes; this partially gelatinizes the starch (converting ~30% of resistant starch), allowing faster browning and crisping while maintaining creamy interiors.timing4-5 minute microwave + 14-15 minute air-fry vs 18-22 minute dry cook
  • ✓
Pat potatoes completely dry after microwaving with paper towels before seasoning and cooking, as surface moisture creates steam pockets that inhibit the Maillard reaction needed for browning and can reduce crispness by up to 35%.techniqueMoisture inhibits browning by ~35%
  • ✓
Bloom the tomato purée in melted butter for 30 seconds before adding stock to concentrate and reduce its acidity (pH drops ~0.3 units), preventing the cream from curdling when combined with the acidic stock.technique30-second bloom; pH reduction of ~0.3
  • ✓
Simmer the cream sauce at 180-190°F (82-88°C) rather than a rolling boil; single cream (18-20% fat) has a curdling point around 190°F, and maintaining sub-boiling temperature prevents protein denaturation and keeps the sauce smooth.timing180-190°F (82-88°C); curdling threshold at ~190°F
  • ✓
Add the chicken to the pan while it's still slightly underdone (internal temp 155-160°F) rather than fully cooked, as residual heat will carry it to food-safe 165°F while it finishes in the simmering sauce, preventing the exterior from drying out.technique155-160°F intermediate; finishes at 165°F
