Start by cutting the flesh out of the tomatoes and set it aside.

Dice the outer part of the tomatoes into about 4mm pieces. Dice 10 strawberries as well and add everything to a bowl together with the basil leaves cut into thin strips.

Add the lemon juice, a tiny splash of olive oil, salt and pepper. Mix gently.

For the vinaigrette, add the tomato flesh, 8 strawberries, white wine vinegar, olive oil and a pinch of salt to a separate bowl. Blend with a hand blender and strain through a fine mesh sieve.
