- 2 tbsp water (30 ml)

- ¾ cup melted butter (170 g)
- 3 tbsp frozen butter (42 g)
- 3 (8 oz) cream cheese, softened (85.1 g)
- 3 large eggs
- 1 tbsp heavy whipping cream (15 ml)
- ½ cup sour cream (120 ml)

- 1 tbsp cornstarch + 2 tbsp water (15 ml)
- ⅓ cup flour (41.6 g)
- 3 cups graham cracker crumbs (720 ml)
- ⅞ cup sugar (175 g)
- 2 tbsp sugar (30 ml)
- 1 tbsp vanilla (15 ml)

Cook apples, butter, brown sugar, and cinnamon over medium-high heat for 3–4 minutes.

Mix cornstarch with water, stir into apples until thickened, then cool.

Mix graham cracker crumbs with melted butter and press firmly into a lightly greased 9-inch springform pan.

Bake for 7–8 minutes.

Beat cream cheese, sugar, and vanilla until smooth.
