👨‍🍳 Instructions

  1. 1

Start by making up the chive sauce and set to one side.

Next, slice the wrap half way down the center. In one quadrant, add the cheese, then the chilli beef, the tortilla chips, followed by the chive sauce.

  3. 3

Fold carefully before transferring to a pan. Keep on one side for a minute and half before flipping for a further minute and half.

  4. 4

Whilst the wrap cooks, in a bowl melt the butter and chopped garlic in a microwave. Stir to combine and add the chopped parsley.

  5. 5

Serve brushing over the garlic butter with any leftover chive sauce.

💡 Pro Tips

  • ✓
Slice the tortilla only halfway through its diameter, cutting from the center to the edge, so you create four quadrants that fold into a stable triangle rather than a wrap that falls apart.techniquehalfway cut, 4 quadrants
  • ✓
Layer the cheese directly against the tortilla before adding the hot chilli beef so it acts as a moisture barrier, melting into a seal at 150-160°F that prevents the tortilla from becoming soggy from the beef's juices.technique150-160°F cheese melt point
  • ✓
Add tortilla chips as a middle layer rather than on top, since their starch structure stays crisp only when insulated from direct steam contact with the chive sauce for the full 3-minute cook.ingredient3-minute total cook
  • ✓
Cook the folded wrap for exactly 90 seconds per side over medium heat so the Maillard reaction browns the exterior into a crisp shell while the cheese fully melts without scorching the tortilla's sugars.timing90 seconds per side, medium heat
  • ✓
Melt the butter and garlic in the microwave in 15-second bursts rather than continuously, since garlic's allicin compounds turn bitter above 200°F and continuous heating risks scorching before the butter fully liquefies.equipment15-second bursts, under 200°F
