- 1 cup gruyere (240 ml)
- 1/2 cup heavy cream (120 ml)
- 1/2 cup parm (120 ml)

- 500 grams pasta (17.6 oz)

- 1/4 tsp black pepper (1.25 ml)
- 1 pinch nutmeg

- 1 tbsp worcestershire (15 ml)

Slice the onions and caramelize them low and slow for at least 20 minutes.

Shred the cheese (a combination of gruyere and parmesan).

Once the onions are richly colored, add garlic, fresh thyme, a pinch of nutmeg, and black pepper.

Deglaze with white wine, scraping the bottom of the pan.

Add the pasta and beef stock, and let it simmer until the pasta is cooked.

Stir in heavy cream and the cheese mixture.

Serve topped with extra thyme and more parmesan, and optionally drizzle with calabrian chili oil.
