- 1 tablespoon cold butter (14 g)
- 2 cups buttermilk (454 g)
- Greek yogurt + parsley + mustard + salt + lemon juice

- 2/3 teaspoon baking soda (3.35 ml)
- 3 tablespoons cornstarch / potato starch (45 ml)potato starch can be used
- 1 cup flour (125 g)
- 2 tablespoons honey (30 ml)

- 1/2 teaspoon black pepper (2.5 ml)
- 1 teaspoon garlic powder (5 ml)
- 2 teaspoons garlic powder (10 ml)
- 1 teaspoon sweet paprika (5 ml)
- 2 teaspoons sweet paprika (10 ml)
- 1 teaspoon salt (5 ml)

- 3 tablespoons ketchup (45 ml)
- 1 tablespoon sriracha (15 ml)

- 1 cup crushed cornflakes (240 ml)

Cut the chicken into smaller pieces and place in a bowl.

Pour buttermilk over the chicken and add spices. Let it sit for at least 1 hour.

Crush the cornflakes by hand or in a blender. Combine with the remaining dry ingredients.

Coat the chicken pieces by pressing firmly into the dry mixture. Then dip the piece back into the buttermilk marinade and press again into the dry mixture. This may get a bit messy.

Let the coated pieces rest for 10 minutes. After that, brush both sides with oil.

Preheat the air fryer to 190°C (375°F). Fry for about 8-13 minutes, depending on the size of the pieces. Flip halfway through cooking.

For the glaze: Combine honey, ketchup, sriracha, water, and lemon juice in a pot and heat. Season with salt and gradually incorporate cold butter in three portions, stirring continuously.

For the yogurt sauce: Combine all ingredients in a bowl and season to taste.
