📝 Ingredients

Serves 8
Servings:

🥬Fresh Produce(2)

  • 3 very ripe bananas
  • 1 banana, sliced

🥛Dairy & Eggs(2)

  • 1/3 cup melted butter (75.6 g)
  • 2 large eggs

🫙Pantry Staples(5)

  • 1 teaspoon baking powder (5 ml)
  • 1 cup brown sugar (200 g)
  • 1 cup chocolate chips (240 ml)
  • 1 1/2 cups flour (188 g)
  • 1 teaspoon vanilla extract (5 ml)

🧂Spices & Seasonings(2)

  • 1 teaspoon cinnamon (5 ml)
  • 1/2 teaspoon salt (2.5 ml)

👨‍🍳 Instructions

  1. 1

Set your oven to 175°C / 350°F. Lightly grease a 9x5-inch loaf pan and line it with parchment paper.

  2. 2

In a large bowl, mash 3 very ripe bananas until mostly smooth — a few small chunks are okay.

  3. 3

Add in melted butter, brown sugar, eggs, and vanilla extract. Whisk everything together until well blended.

  4. 4

In a separate bowl, mix flour, baking powder, salt, and cinnamon until evenly combined.

  5. 5

Pour the dry mixture into the wet ingredients and fold gently until just mixed — don’t overwork the batter.

  6. 6

Stir through most of the chocolate chips, keeping a handful aside for the top.

  7. 7

Transfer the batter to your prepared pan.

  8. 8

Slice a banana in half and place on top and sprinkle with the remaining chocolate chips.

  9. 9

Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean (a little melted chocolate is fine).

  10. 10

If it’s browning too quickly, loosely cover with foil halfway through.

  11. 11

Let the loaf cool in the pan for 10 minutes, then lift it out and let it cool completely on a wire rack before slicing.
