Blend the fresh tomatoes with the juice of ½ lemon, 2 tablespoons of extra virgin olive oil, and a pinch of salt.

Put the couscous in a bowl, pour the blended tomato over it, mix, cover, and let it rest for about 10-15 minutes until it absorbs the liquid. Then fluff it with a fork.

Meanwhile, chop the zucchini and bell pepper and sauté them quickly in a pan, leaving them slightly crunchy. Cut the cucumber into pieces.

When the couscous is cool, add the zucchini, bell pepper, cucumber, green olives, fresh basil, and a drizzle of extra virgin olive oil. Mix everything and let it flavor.
