The Story
This bacon-and-cream-cheese bagel owes its soul to 1980s New York delis, where Jewish immigrant traditions of schmearing cream cheese collided head-on with American diner bacon culture, but the everything bagel itself is pure Polish-Jewish heritage from the Lower East Side—now Ireland's Fitzgerald's Bakery is nicking the format entirely, proving that breakfast carbs are the one true global currency, no passport required.
Regional Twist
Down in Cork city, bagel-makers swap the light Philadelphia for full-fat Coolea cheese blended with cream cheese, then torch the tomato slices briefly before layering—because the Irish, quite rightly, refuse to let a soft tomato ruin a bacon-laden breakfast bagel.

👨🍳 Instructions
- 1
Cook off the bacon until crispy & allow to cool.
- 2
Cook off the egg in a pan, to get it jammy like this I usually bring the pan to a medium heat add in the egg and cook for a few mins then add the pan lid & cook for another few mins until the white is fully cooked.
- 3
Finely chop the bacon and then mix together with the cream cheese & chives.
- 4
Add the mixture to the bagel along with the tomatoes & finally the egg.
💡 Pro Tips
- ✓Toast your bagel at 375°F for 3-4 minutes before assembly because the heat renders 15-20% of surface moisture, creating a structural barrier that prevents cream cheese from soaking into the crumb and making it soggy.technique375°F for 3-4 minutes
- ✓Cook bacon to 160°F internal temperature (fully crispy, not chewy) before mixing into cream cheese because residual fat will prevent proper emulsification and cause the spread to become grainy instead of smooth.timing160°F internal temperature
- ✓Use cream cheese at 65-68°F (room temperature) when folding in bacon and chives because cold cream cheese (below 50°F) has 40% less extensibility and will break apart rather than create a cohesive spread.ingredient65-68°F
- ✓Cook your egg on medium heat for 2 minutes uncovered, then reduce to medium-low before covering for 2-3 additional minutes because the initial high surface temperature sets whites while the residual heat with lid coverage gently cooks yolk to jammy consistency (165°F center).timing2 minutes medium, then 2-3 minutes medium-low covered
- ✓Assemble the bagel immediately after toasting and add the warm egg last (within 30 seconds of cooking) because the egg's residual heat (160-165°F) will soften the cream cheese mixture just enough for the yolk to create a cohesive sauce.techniqueWithin 30 seconds of egg cooking
