👨‍🍳 Instructions

  1. 1

Activate yeast: In a small bowl, mix warm milk, sugar, and yeast. Let it sit 5–10 minutes until foamy.

  2. 2

Make dough: In a large bowl (or stand mixer with dough hook), combine flour, oil, and salt. Add eggs, vanilla, and the yeast mixture. Mix until combined.

  3. 3

You can use a stand mixer or you can use a bowl using your hand and knead the dough until smooth and elastic (about 8–10 minutes by hand, 5–6 minutes in mixer).

  4. 4

First rise: Place dough in a greased bowl, cover, and let rise 1–2 hours, until doubled.

  5. 5

Shape donuts: Punch down the dough. Roll out to about ½ inch thick. Cut circles with a round cutter (about 3 inches). Place on a parchment-lined tray, cover lightly, and let rise again for 30–45 minutes.

  6. 6

Fry: Heat oil to 335°F (165°C). Fry donuts 2–3 minutes per side, until golden brown. Drain on paper towels.

  7. 7

Coat: While warm, roll in granulated sugar.

  8. 8

Fill: Using a piping bag with a round tip, poke a hole in the side and pipe in your filling of choice until plump.
