    Preheat oven to 350 degrees. Spray a bread pan with oil and line with parchment paper.

    In a large mixing bowl mash 2 bananas (save the 3rd for the top). Then add in eggs, honey, oil, Greek yogurt and vanilla. Mix until well combined.

    In a smaller bowl mix flour, baking soda, ginger, nutmeg and cinnamon. Add into wet ingredients and gently mix until incorporated.

    Fold in the grated carrots, pecans, and raisins. Spread into bread pan then add sliced banana on top. Bake for 50-55 minutes. If it becomes too brown, tent with foil.

    While bread is cooling, mix together cream cheese, vanilla and honey until smooth. Once bread is completely cooled, spread cream cheese frosting over top. Garnish with more pecans. Slice & serve.
