💡 Pro Tips
- ✓Cut chicken breast cubes to exactly 1-inch pieces to ensure even cooking - smaller pieces dry out in 5 minutes, larger pieces remain undercooked at the center.technique1-inch cubes
- ✓Dice potatoes to ¾-inch maximum for the 20-minute bake time because larger pieces won't develop crispy exteriors while cooking through at 400°F.timing¾-inch, 20 minutes, 400°F
- ✓Add honey only after reducing heat to medium-low (around 275°F) because honey burns at 320°F, creating bitter compounds that overpower the BBQ flavor.technique275°F maximum
- ✓Use full-fat cottage cheese (4% milkfat minimum) for the sauce because low-fat versions lack sufficient proteins to create the creamy emulsion needed to coat potatoes.ingredient4% milkfat minimum
- ✓Toss potatoes with grated parmesan before baking rather than powdered - the moisture in fresh grated cheese (35-40%) creates better browning through the Maillard reaction.technique35-40% moisture
