  • 1 tsp pepper (5 ml)
  • 1/2 red onion

  • 350ml chicken stock (11.8 fl oz)

  • 90g light cream cheese (3.18 oz)
  • 60ml low fat milk (2.03 fl oz)
  • 15g grated Parmesan (0.53 oz)

  • 1 tbsp olive oil (15 ml)
  • 1/2 tsp sugar (2.5 ml)
  • 20g tomato paste (0.71 oz)

    Boil your potatoes in some salted water for 15 minutes until fork tender, then drain the water and mash them up till completely smooth.

    Dice your chicken breast into cubes, add the seasonings with olive oil and mix well till fully coated.
