💡 Pro Tips

  • Double-fry your potato fries at two temperatures: first at 325°F for 3-4 minutes to cook through, then at 375°F for 2-3 minutes to achieve maximum crispiness through moisture evaporation.technique325°F then 375°F
  • Let cornflour-coated chicken rest for 10-15 minutes before cooking so the starch absorbs moisture and creates a crispier crust when fried.timing10-15 minutes
  • Cook chicken to an internal temperature of 165°F but remove at 160°F since carryover cooking will raise it 5-7°F while maintaining juiciness.technique160°F removal, 165°F final
  • Toss chicken in dynamite sauce immediately after cooking while still hot (above 140°F) so the sauce adheres better and doesn't slide off cooled proteins.timingAbove 140°F
  • Use a 3:1 ratio of mayo to combined hot sauces in your dynamite sauce to maintain proper emulsion and prevent breaking from acid content.ingredient3:1 ratio
