💡 Pro Tips

  • Spread cooked rice in a single layer no thicker than 1/2 inch on the baking tray because thicker layers steam instead of crisping, preventing proper dehydration.technique1/2 inch thickness
  • Let cooked rice cool completely and sit uncovered for 30-60 minutes before seasoning to remove surface moisture, which would create steam and prevent crisping.timing30-60 minutes
  • Pound chicken breast to uniform 1/4 inch thickness using a meat mallet because even thickness ensures consistent cooking and prevents dry edges while center reaches 165°F.technique1/4 inch thickness
  • Use day-old refrigerated rice instead of fresh because aged rice has lost 15-20% moisture content, creating better texture for crisping.ingredient15-20% moisture loss
  • Flip rice halfway through the 40-minute bake time to ensure even browning and prevent bottom layer from burning while top remains pale.timing20 minute intervals
