📝 Ingredients

Serves 4
Servings:

🥬Fresh Produce(1)

  • 1/4 cup water (60 ml)

🥩Meat & Seafood(1)

  • 1 block tofu, cut into 1 inch cubes

🫙Pantry Staples(6)

  • 2 tbsp cornstarch (30 ml)
  • 1/2 tbsp maple syrup (7.5 ml)
  • 2 tbsp nutritional yeast (30 ml)
  • 1/4 cup peanut butter (56.8 g)
  • 1/2 tbsp rice vinegar (7.5 ml)
  • 1 tbsp sesame oil (15 ml)

🧂Spices & Seasonings(1)

  • 1/2 tsp garlic powder (2.5 ml)

🍯Sauces & Condiments(2)

  • 1 tbsp mirin (15 ml)
  • 2 tbsp soy sauce (30 ml)

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the tofu with nutritional yeast, cornstarch and garlic powder. Mix until the tofu cubes are evenly coated.

  2. 2

Add the soy sauce and sesame oil and stir gently until combined.

  3. 3

Place tofu in air fryer basket and air-fry at 400F for 25 minutes, shaking the basket every 5-10 minutes to ensure the tofu is evenly baked. Alternatively, spread tofu cubes on a baking sheet and place in a 400F oven for 30 minutes, flipping halfway through.

  4. 4

Combine peanut butter, soy sauce, mirin, rice vinegar, maple syrup and garlic powder in a small bowl and whisk until combined. The sauce will be very thick at this point. Add the water in small increments and stir until the sauce is smooth.

  5. 5

Serve the tofu with steamed broccoli over rice. Top with peanut sauce, sesame seeds and green onion. Optionally, top with chili oil and crushed garlic chips.
