💡 Pro Tips
- ✓Cook the sautéed vegetable mixture until moisture content drops to 15-20% by weight - test by pressing a handful and seeing minimal liquid release - to prevent soggy patties that fall apart.technique15-20% moisture
- ✓Use chickpea flour at 8-12% of total mixture weight as it contains more protein (20g per 100g) than regular flour and creates stronger binding when hydrated.ingredient8-12% mixture weight
- ✓Chill formed patties for 30 minutes before cooking so proteins set and starches firm up, reducing breakage during flipping by up to 60%.timing30 minutes
- ✓Pan-fry patties at 325-350°F (medium heat) to develop Maillard browning without burning the exterior before the interior firms up through protein coagulation.technique325-350°F
- ✓Steam-melt cheese using exactly 1-2 tablespoons water and cover immediately - steam reaches 212°F instantly while direct heat can separate cheese proteins and create grainy texture.technique1-2 tablespoons water
