Serves 4🥛Dairy & Eggs(3)
- 2 eggs
- 1/2 cup (113g) 0% Greek yogurt (120 ml)
- 1 cup (227g) 0% Greek yogurt for frosting (240 ml)
🫙Pantry Staples(3)

🧂Spices & Seasonings(1)
- pinch salt
📦Other(7)
- 1 cup (240g) applesauce (240 ml)
- 1/2 tsp (2g) bday cake extract for frosting (2.5 ml)
- 1/2 cup fruity pebbles for filling and topping (120 ml)
- 1/2 cup (100g) monk fruit sweetener (120 ml)
- 1/4 tbsp (3g) powdered monk fruit sweetener for frosting (3.75 ml)
- 1 scoop (37g) protein (I used 1UP Birthday Cake)
- 3/4 scoop (27.5g) protein (I used 1UP Birthday Cake) for frosting
👨🍳 Instructions
- 1
Preheat oven to 350°F.
- 2
Mix cake ingredients and pour into pan. I used 9x5 loaf pan.
- 3
Bake for around 50 minutes or until toothpick comes out clean (halfway through add aluminum foil on top so top doesn’t burn while rest of cake cooks).
- 4
Combine ingredients for frosting and frost cake.
- 5
Right before eating, add fruity pebbles so they stay crunchy.
- 6
Enjoy!
💡 Pro Tips
- ✓Cover the loaf with aluminum foil at exactly 25 minutes (halfway through 50-minute bake) to prevent over-browning while the dense interior finishes cooking, as milk sugars caramelize faster than regular cake batters.timing25 minutes
- ✓Bake at 350°F instead of higher temperatures because the milk proteins and sugars in cereal milk create more browning reactions, requiring gentler heat to avoid burnt flavors.technique350°F
- ✓Add fruity pebbles only in the final 2-3 minutes before serving because cereal loses 80% of its crunch within 5 minutes when exposed to moisture from frosting.timing2-3 minutes
- ✓Test doneness with a toothpick inserted 1 inch from the center rather than dead center, as loaf cakes cook from outside-in and the true center may still be underdone when edges test clean.technique1 inch from center
- ✓Use a 9x5 inch metal loaf pan rather than glass because metal conducts heat 25% more efficiently, ensuring even baking for dense cereal milk batters that can be prone to soggy centers.equipment25% more efficient
