  • 5 slices of galangal
  • 2 stalks of lemongrass
  • 1 can of straw mushrooms
  • 1 TBSP thai chili paste (15 ml)

    Prepare your aromatics: Peel the first couple outer layers of lemongrass, cut off the leafy ends, and bruise it. Fold lime leaves in half lengthwise and peel off the stem. Wash galangal and cut 5 slices (about 1/8 of an inch thick). Peel shallot and cut into quarters.

    Bring 3 cups of chicken stock to a boil. Add lemongrass, shallots, galangal, and lime leaves. Cook for 2 minutes and then remove most of the aromatics, leaving a couple of pieces.

    Add straw mushrooms and cook for 1 minute.

    After 1 minute, add shrimp, fish sauce, thai chili paste, evaporated milk, and lime juice.

    Finish with chopped cilantro.
