💡 Pro Tips

  • Layer tortilla pieces in the bottom third of your slow cooker first, then add filling, to prevent bottom tortillas from becoming mushy by absorbing excess liquid during the 4-8 hour cook time.technique4-8 hour cook time
  • Add peppers and corn only in the final 10 minutes because their cellular structure breaks down after 30 minutes of slow cooking, releasing excess water that dilutes flavor.timing10 minutes final cook
  • Use low-moisture mozzarella (45-50% moisture content) instead of fresh mozzarella to prevent a watery top layer that won't properly melt and brown.ingredient45-50% moisture
  • Remove the slow cooker lid for the final 10 minutes of cooking to allow steam to escape and concentrate flavors by reducing liquid content by 15-20%.technique15-20% liquid reduction
  • Cut tortillas into 2-inch strips rather than leaving whole because smaller pieces distribute more evenly and absorb liquid at a consistent 3:1 ratio throughout the dish.technique2-inch strips, 3:1 ratio
