  • 2 tbsp soy sauce (30 ml)

📦Other(2)

  • 1/2 tbsp chili flakes (7.5 ml)
  • 1 pack wonton wrapper

👨‍🍳 Instructions

  1. 1

In a large bowl, combine ground pork, soy sauce, sesame oil, ginger, garlic, green onion, salt, and white pepper. Use your hand to mix thoroughly until all ingredients are well incorporated. Then add the egg and mix again until the filling forms a smooth and sticky paste.

  2. 2

Use a tongue depressor or wooden stick to scoop 1 tsp of filling and place it onto the center of a wonton wrapper. Use your other hand to wrap the filling around and make a fist to seal the edges. Slide the wooden stick out and repeat the process with the remaining wonton filling and wrappers. Alternatively, you can use a spoon to scoop the filling.

  3. 3

To cook the wontons, bring a large pot of water to a boil. Stir gently with a spatula or spoon, and cook until the wontons are floating to the top. Transfer the wontons to a bowl, add chili oil/sauce, serve hot and enjoy!

💡 Pro Tips

  • Mix the pork filling in one direction only for 2-3 minutes until it becomes sticky and cohesive, which develops myosin proteins that bind the meat and prevent crumbly filling.technique2-3 minutes
  • Keep a small bowl of water nearby and lightly dampen wonton wrapper edges before sealing, as the 12-15% moisture content activates the flour's gluten for a stronger seal.technique12-15% moisture
  • Use exactly 1 teaspoon of filling per wonton to maintain a 1:3 filling-to-wrapper ratio, preventing bursting during cooking while ensuring adequate flavor.ingredient1:3 ratio
  • Boil wontons at a rolling boil (212°F) for 6-8 minutes total, as they float when the internal temperature reaches 165°F but need 2-3 additional minutes for the wrapper to fully cook.timing212°F, 6-8 minutes
  • Add wontons to boiling water in batches of 8-10 pieces to prevent temperature drop below 200°F, which would cause uneven cooking and soggy wrappers.technique8-10 pieces, 200°F minimum
