Chop the potatoes into cubes and place into a bowl. Spray with some oil, then season with smoked paprika, garlic powder, cumin and salt. Transfer to your air fryer and cook at 200 degrees Celsius for 20 minutes, shaking halfway. They should be crispy and cooked through, if not, cook a little longer.

Dice the tomatoes and red onion. Place into a bowl and mix with chopped fresh coriander, lime juice, and salt.

For the sauce, mix the yogurt, sour cream, chipotle paste, lime, garlic powder, and salt. Place into the fridge to chill.

Heat a pan over medium-high. Add a little oil, then the mince, and cook 4–5 minutes, breaking it up. Stir in chipotle paste, tomato paste, cumin, paprika, grated garlic, salt and pepper. Cook for 1 minute, add the water and cook for another minute. Finish with a squeeze of lime juice.
