    Preheat oven to 400 degrees.

    In a bowl mix ingredients for the beef gyro. Then spread into an even layer on a baking sheet lined with parchment paper— I used an 18x13” but you can use a smaller pan for thicker strips (adjust cook time as needed).

    Place parchment over top and roll until spread across the baking sheet and top is flat & even.

    Using a bench scraper or knife score the meat into equal sized strips. Drizzle or brush with olive oil then bake for 20 minutes. For the last 3-5 minutes, turn oven to broil to slightly crisp.

    Meanwhile, prepare the tzatziki by grating the cucumber, squeezing out excess liquid then adding to a bowl with yogurt, lemon juice, olive oil and seasonings.

    To assemble, add tzatziki and lettuce to a warm pita then top with gyro strips, tomato, red onions, tomato, parsley and feta.
