💡 Pro Tips

  • Reserve 1/2 cup of starchy pasta cooking water before draining because the starches help emulsify the yogurt sauce and prevent it from breaking when hot noodles are added.technique1/2 cup pasta water
  • Use full-fat Greek yogurt (minimum 10% fat content) as it contains enough protein and fat to remain stable when mixed with hot pasta without curdling.ingredient10% fat content
  • Heat the sesame oil to 325-350°F before pouring over the noodles to create the proper sizzling effect that blooms the sesame flavor and creates aromatic compounds.technique325-350°F
  • Add the hot noodles to the yogurt sauce within 30 seconds of draining to maintain optimal temperature for sauce adherence while preventing yogurt separation.timing30 seconds
  • Toast sesame seeds for 2-3 minutes until they release their oils and turn golden, as this activates sesamin compounds that intensify nutty flavor by 300%.timing2-3 minutes
