📝 Ingredients

Serves 4
Servings:

🥬Fresh Produce(1)

  • Water – 100 g (3.53 oz)

🫙Pantry Staples(2)

  • Neutral oil (for chilling)
  • Sugar – 45 g (0.23 cup)

📦Other(3)

  • Agar agar – 1.5 teaspoon (7.5 ml)
  • Gold dust powder – 1/8 teaspoon (0.62 ml)
  • Rose water – 50 g (1.76 oz)

👨‍🍳 Instructions

  1. 1

In a tall glass, pour neutral oil and place it in the freezer or refrigerator until it reaches approximately 4°C.

  2. 2

In a bowl, combine water, rose water, sugar, and agar agar. Mix thoroughly to avoid any lumps. Transfer the mixture to a saucepan and bring it to a boil. Allow it to boil properly — agar agar must activate fully for correct gel formation. Switch off the heat. Immediately add 1/8 teaspoon gold dust powder and mix well to evenly distribute the shimmer.

  3. 3

Transfer the hot liquid into a squeezy bottle. Pipe small droplets directly into the 4°C chilled oil. As the droplets hit the cold oil, they will instantly set and form crystal pearls.

  4. 4

Using a spoon, remove the pearls from the oil. Transfer them into a strainer placed over a bowl of ice water. Gently dip and tap the strainer in the water to wash away excess oil. Then transfer the pearls onto a cloth to drain excess water.

💡 Pro Tips

  • Maintain oil temperature at exactly 4°C using a thermometer because agar sets at 32-43°C, and the 28°C differential creates instant gelification for perfect sphere formation.technique4°C oil temperature
  • Use a 0.9% agar concentration (typically 1g per 100ml liquid) because this creates firm enough pearls to hold their shape while remaining tender to bite.ingredient0.9% agar concentration
  • Pipe droplets from 6-8 inches above the oil surface so they achieve terminal velocity and form uniform spheres before hitting the cold oil barrier.technique6-8 inches height
  • Remove pearls within 30-45 seconds of formation because longer contact with oil creates a slick coating that interferes with the final wash step.timing30-45 seconds
  • Use neutral oil with high smoke point (like grapeseed at 420°F) because it remains fluid at 4°C and won't impart flavor to the delicate rose pearls.ingredient420°F smoke point
