    Rub the steaks with a little olive oil and season well with salt and pepper. Set aside at room temperature.

    Heat a frying pan over medium-high heat and add 1 tbsp butter. Add 1 garlic clove and a sprig of rosemary. Add the steaks to the pan. Cook for around 3 minutes on each side (for medium-rare), spooning the melted butter over the steaks regularly as they cook. Remove the steaks from the pan and leave to rest.

    For the peppercorn sauce, add 1 tbsp of butter to a pan over medium heat. Add the diced onion and cook until softened. Stir in the garlic, whole peppercorns, salt, pepper, gravy powder, Worcestershire sauce and milk. Mix well and simmer gently until the sauce thickens and becomes smooth and creamy.
