  • 660g Chicken Mince (Coles Less Than 2% Fat Chicken Mince) (1.45 lbs)

  • 6 Cheddar Cheese Slices (Dairyworks Natural Cheddar Cheese)
  • 6 Eggs (can be substituted for egg whites for less calories & more protein)optionalegg whites

  • 70g Breadcrumbs (Kelloggs Cornflakes Breadcrumbs - not all of this is used, each chicken patty picked up 8g - 12g. I used 30g in total) (2.47 oz)

  • 1/2 Tsp Black Pepper (2.5 ml)
  • 1 Tsp Salt (5 ml)
  • 1 Tsp Smoked Paprika (5 ml)

  • 120g Light Mayonnaise (20g per muffin - Callowfit Mayo Style Sauce or any fat free/light mayonnaise) (4.24 oz)any fat free/light mayonnaise

    In a bowl add chicken mince followed by salt, onion and garlic powder and a tiny bit of pepper. Mix it together, make sure your hands are wet, form 6 patties, place them on baking paper and in the freezer to let them firm up.

    Cook 6 eggs using an egg ring or a cookie cutter on a pan. Once they're cooked, set them aside.

    On a plate, add breadcrumbs with some paprika and a dash of the same seasonings used before. Mix it together.

    In a separate bowl, whisk one egg, then dip each piece of chicken in the egg and coat it evenly in the breadcrumbs. Spray with light cooking oil and air fry or oven bake.

    Toast the English Muffin, add a slice of cheese, a piece of chicken, one egg, and spread light mayo on the top bun. Repeat the process for the other 5.
