  • 90g Light Cream Cheese (Philadelphia Lightest or Light Laughing Cow Cheese) (3.18 oz)
  • 340ml Fat Free Evaporated Milk (Devondale Fat Free Evaporated Milk) (11.5 fl oz)
  • 20g Freshly Grated Parmesan Cheese (0.71 oz)

  • 320g Pasta (dry weight - Vetta Smart Penne Pasta - or pasta of choice) (11.3 oz)

  • Chipotle Seasoning: 1 Tsp Salt, 1.5 Tsp Smoked Paprika, 1 Tsp Chilli Powder, 1 Tsp Ground Cumin, 1 Tsp Garlic Powder, 1 Tsp Oregano, 1 Tsp Coriander Powder (5 ml)
  • 2 Tsp Smoked Paprika (10 ml)

  • 1 - 3 Tsp Chipotle Sauce (La Costena - add more or less depending on how spicy you want it) (5-15 ml)

    Start by grabbing your thinly cut chicken breast, add the seasonings listed with a bit of olive oil, mix it and set it aside.

    In a blender cup add fat free milk, grated parmesan cheese, chipotle sauce, light cream cheese and blend it together.

    Cook the chicken on medium to high heat for 4 minutes on each side.

    While the chicken is cooking, start cooking up your pasta as well.

    Once the chicken is cooked, set it aside and add diced onion, diced garlic and cook until it has some color.

    Add the blended sauce, lower the heat, add chicken bouillon powder, smoked paprika, mix and simmer until the sauce has thickened and is smooth and creamy.

    Add some parsley with the cooked and drained pasta and a little bit of pasta water, keep stirring until well combined.
