πŸ’‘ Pro Tips

  • βœ“
Press bread wells to 1/2 inch depth maximum - deeper wells cause the custard to pool and create uneven cooking with raw centers while edges overcook.technique1/2 inch depth
  • βœ“
Use day-old bread with 15-20% less moisture content than fresh bread because it creates better wells without tearing and absorbs custard without becoming soggy.ingredient15-20% less moisture
  • βœ“
Fill custard wells to exactly 3/4 capacity because the egg mixture expands 10-15% during cooking and will overflow if overfilled.technique3/4 capacity, 10-15% expansion
  • βœ“
Check custard doneness at 8 minutes - it should jiggle slightly in center but spring back when touched, as carryover heat will finish cooking in 2-3 minutes.timing8 minutes check, 2-3 minutes carryover
  • βœ“
Add blueberries in final 3-4 minutes of cooking to prevent bursting and releasing excess moisture that would make custard watery.timingFinal 3-4 minutes
