💡 Pro Tips
- ✓Rub orange zest into sugar for 2-3 minutes until the sugar becomes fragrant and slightly orange-tinted, as the friction releases citrus oils that would otherwise remain trapped in the zest.technique2-3 minutes
- ✓Mix wet and dry ingredients only until just combined (about 10-15 gentle folds) because overworking develops gluten strands that create a tough, dense crumb structure.technique10-15 folds
- ✓Apply orange syrup immediately when the cake reaches 190-200°F internal temperature, as the hot cake creates steam that helps the syrup penetrate deeper into the crumb.timing190-200°F
- ✓Use room temperature yogurt and eggs (68-72°F) because cold dairy can cause the melted butter to seize and create lumps that won't fully incorporate.ingredient68-72°F
- ✓Test doneness at 45 minutes by inserting a toothpick 1 inch from the center rather than dead center, as loaf cakes often appear underdone in the very middle while being perfectly baked.timing45 minutes
