💡 Pro Tips

  • Sear the tortilla kebabs at 400-425°F for 2-3 minutes per side to achieve proper Maillard browning on the beef while crisping the tortilla without burning.technique400-425°F, 2-3 minutes per side
  • Apply garlic butter only in the final 30 seconds of each side's cooking to prevent milk solids from burning and creating bitter flavors.timing30 seconds
  • Use 80/20 ground beef (20% fat content) because the fat renders during searing to keep the meat moist while the tortilla absorbs excess fat for crispiness.ingredient20% fat content
  • Cut tortillas with a sharp knife in one decisive motion rather than sawing to prevent the beef filling from being squeezed out and maintain clean edges for even cooking.technique
  • Thread skewers through the center of each piece at a 90-degree angle to the tortilla layers, ensuring the skewer penetrates both tortilla and beef for structural integrity during flipping.equipment
