- 3 stalks celery
- 4 cloves garlic
- 1 yellow onion
- 5 large sweet potatoes

- 4lbs boneless pork butt/shoulder (1.81 kg)
🥛Dairy & Eggs(1)
- 5oz @churnfoods cinnamon maples butter (142 g)

- 3Tbsp AP flour (45 ml)
- Neutral oil for searing
🧂Spices & Seasonings(2)
- 4 rosemary sprigs
- S&P

- 1.5 cups red wine (360 ml)

Season pork heavily with salt and pepper.

Sear pork heavily on all sides over medium/high heat.

Remove pork, add vegetables and sauté for 5 minutes.

Add flour and cook for 2 more minutes.

Add wine, stir while cooking over medium heat until thickened.

Add pork, rosemary, and chicken stock until just covered.

Bring to a simmer. Place lid on pot and cook in oven at 325°F for 2.5 hours.

Prick potatoes all over with a fork.

Bake at 400°F for 1 hour or until very tender.

Puree potatoes, season, add butter.

Once pork is cooked, shred well.

Layer pork then potatoes.

Broil for 20 minutes.

Brush with additional butter and finish with chives.
