💡 Pro Tips
- ✓Heat your oil to 350-375°F before adding tortillas because this temperature creates immediate steam that crisps the exterior while preventing oil absorption that makes tacos soggy.technique350-375°F
- ✓Brown ground meat in batches using no more than 1 pound per 12-inch pan because overcrowding drops pan temperature below 300°F, causing steaming instead of the Maillard reaction.technique1 pound per 12-inch pan
- ✓Add cheese in a 2:1 ratio (bottom to top) when folding tacos because the bottom layer creates a moisture barrier while the top layer provides binding and browning.ingredient2:1 ratio
- ✓Fry each side of folded tacos for exactly 2-3 minutes because this timing allows cheese to melt and bind (165°F internal) while achieving golden-brown crust without burning.timing2-3 minutes per side
- ✓Use a splatter screen or inverted smaller pan as a weight when frying folded tacos to ensure even contact and prevent the tortilla from opening due to steam pressure.equipment
