π‘ Pro Tips
- βMicrowave the butter-condensed milk mixture at 50% power instead of full power to prevent the condensed milk from scorching and creating a grainy texture that won't bind properly with the crumbs.technique50% power
- βPress the base mixture using a flat-bottomed measuring cup with 15-20 pounds of pressure to create an even 1cm thickness that won't crumble when sliced.technique15-20 lbs pressure, 1cm thickness
- βChill the pressed base for exactly 30 minutes before adding the chocolate layer so it's firm enough to support the topping but not so cold that the warm chocolate seizes on contact.timing30 minutes
- βMelt chocolate and Biscoff spread using a 2:1 ratio and heat to exactly 115Β°F - any hotter and the mixture will separate due to different melting points of cocoa butter and palm oil.ingredient115Β°F, 2:1 ratio
- βAllow the completed slice to set in the refrigerator for minimum 4 hours because the condensed milk needs this time to reach its final binding consistency through moisture redistribution.timing4 hours minimum
