Sesame oil loses 90% of its flavor when heated above 350°F—that's why restaurants add it last.

💡 Pro Tips

  • Cook ground chicken to an internal temperature of 165°F, breaking it into small uniform pieces (pea-sized) to maximize surface area for better browning and flavor absorption.technique165°F internal temp
  • Add sesame oil at the end of cooking the chicken rather than for initial frying, as sesame oil has a low smoke point of 350°F and becomes bitter when overheated.timing350°F smoke point
  • Char green beans at high heat (400°F+ pan temperature) for 2-3 minutes without moving them to develop proper Maillard browning before adding liquid ingredients.technique400°F+ pan temp, 2-3 minutes
  • Toast sesame seeds in a dry pan for 30-45 seconds until fragrant before adding to the beans, as raw seeds lack the nutty compounds that develop through heat activation.ingredient30-45 seconds
  • Balance your sauce with a 3:1:1 ratio of soy sauce to rice wine vinegar to honey for optimal umami-acid-sweet harmony that coats proteins without overpowering.ingredient3:1:1 ratio
