👨‍🍳 Instructions

    In a bowl add diced sweet potatoes and season with olive oil, Cajun, paprika, salt & pepper and then add to the air fryer for 25 minutes.

    To the same bowl add 2 chicken breasts and season with a big squeeze of lime, Cajun, garlic powder, salt & pepper and then air fry for 20 minutes or until the chicken is fully cooked through.

    Whilst the chicken & sweet potato cook, add red & yellow peppers to a frying pan and season with Cajun, garlic powder and cook until soft.

    To make the salsa add chopped cherry tomatoes, diced red onion, fresh parsley and a squeeze of lime.

    When the chicken is cooked, shred it and serve it on top of the sweet potatoes with salsa, guacamole, sour cream and fresh parsley.
