👨‍🍳 Instructions

  1. 1

Mix together the ingredients for the dumpling sauce and set aside.

  2. 2

To make the filling, add the minced pork, garlic, ginger, cabbage, spring onions/scallions, egg, pepper, sesame oil, and soy sauce to a bowl and mix.

  3. 3

    Add the cornstarch last.

  4. 4

Place 1 heaped teaspoon of the meat mixture in the middle of each wrapper and spread to the edges.

  5. 5

Preheat a large pan over medium heat and add 1 Tbsp oil (per batch); working in batches, place the dumplings meat side down on the pan, press down with a spatula to flatten the meat and cook for 2-3 minutes.

  6. 6

Flip and cook for an additional 2-3 minutes then remove from pan and top with shredded lettuce, carrot and the dipping sauce.

💡 Pro Tips

  • Press dumplings with 15-20 pounds of force using a wide spatula to create maximum surface contact—this Maillard reaction zone should reach 300°F for optimal caramelization.technique300°F surface temp
  • Add cornstarch last to prevent gluten development which would make filling tough—cornstarch creates a slurry that binds without activating proteins.technique
  • Cook first side for exactly 2-3 minutes without moving to develop a golden crust—lifting too early breaks the protein coagulation at 140-160°F.timing2-3 minutes
  • Use medium heat (275-300°F pan surface) rather than high heat to ensure the meat cooks through before the wrapper burns—pork needs 160°F internal temperature.equipment275-300°F pan temp
  • Spread filling completely to wrapper edges because the 'smash' technique relies on maximum meat-to-pan contact for the signature crispy texture.technique
