📝 Ingredients

Serves 4
Servings:

🥛Dairy & Eggs(3)

  • 100g melted butter (7 tbsp)
  • 1/2 cup milk chocolate chips (I used white chocolate) (120 ml)
  • 2 eggs

🫙Pantry Staples(3)

  • 1 cup desiccated coconut (240 ml)
  • 1 cup rolled oats (240 ml)
  • 1 1/2 cups Rice Bubbles (360 ml)

👨‍🍳 Instructions

  1. 1

    Preheat oven to 180 degrees.

  2. 2

In a large bowl add all the ingredients except for the chocolate chips. Give it a good stir and then add the chocolate chips.

  3. 3

Press down in a lined tray so nice and firm.

  4. 4

Place in oven for 20-25 minutes or until the top is golden.

  5. 5

Once taken out of the oven and cooled slightly, transfer to freezer for 45 minutes to help it set.

  6. 6

Remove and cut into bars. Keep in the fridge or freezer.

💡 Pro Tips

  • Press the muesli mixture with 15-20 pounds of pressure using a flat-bottomed measuring cup to achieve 85% compaction, preventing crumbly bars that fall apart.technique85% compaction
  • Line your tray with parchment paper extending 2 inches over edges to create handles, as the 45-minute freeze makes bars too firm to remove without lifting aids.equipment2 inches overhang
  • Add chocolate chips only after the mixture cools for 3-4 minutes to prevent melting, as temperatures above 86°F will cause chips to lose their shape.timing86°F threshold
  • Bake until internal temperature reaches 200-205°F rather than relying on color alone, as this ensures proper moisture evaporation for bars that hold together.technique200-205°F internal temp
  • Cut bars while still slightly frozen after 30-35 minutes in freezer using a sharp knife dipped in warm water, as fully frozen bars will crack along stress lines.timing30-35 minutes
