💡 Pro Tips

  • Freeze the bars for exactly 30 minutes before cutting to prevent crumbling - this firms the structure without making them rock-hard like longer freezing would.timing30 minutes
  • Line your loaf tin with parchment paper extending 2 inches over the sides to create handles for easy removal without breaking the bars.equipment2 inches overhang
  • Temper white chocolate by heating to 115°F, cooling to 84°F, then reheating to 88°F for a glossy drizzle that won't bloom or crack when refrigerated.technique115°F-84°F-88°F
  • Cut bars with a sharp knife dipped in warm water between cuts - the heat prevents the cold bars from cracking and creates clean edges.technique
  • Cool completely at room temperature before the 30-minute freeze step, as residual heat will create ice crystals that make bars soggy when thawed.timing
