    Cut 400 g of potatoes into fries. Season with paprika, garlic powder, pepper, and a few sprays of olive oil. Air fry for 18–22 minutes at 190°C, shaking regularly.

    In a hot pan with a light spray of olive oil, sauté 300 g of 5% minced beef until well cooked and slightly grilled. Add the white part of 3 green onions and 1 clove of garlic. Sauté until the onions become slightly translucent. Then add 1 tbsp gochujang, 2 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp rice vinegar, and 1 tsp sesame oil. Mix well and let reduce for 1–2 minutes until the meat is red and glossy.

    For the fresh green sauce, blend 80 g of 0% cottage cheese, juice and zest of ½ lime, 1 bunch of fresh coriander, salt, and a bit of stevia.

    To serve, layer fries with beef. Optionally add a Korean soft-boiled egg. Top with green onions, sesame seeds, and a drizzle of green sauce.
