💡 Pro Tips

  • Sear tortilla kebabs at 400-425°F for 2-3 minutes per side to achieve proper Maillard reaction on beef while crisping tortilla without burning.technique400-425°F, 2-3 minutes per side
  • Keep beef mixture at 15-20% moisture content by draining excess liquid before assembly - wet filling will make tortillas soggy and prevent proper crisping.ingredient15-20% moisture content
  • Apply chili oil only in the final 30-60 seconds of cooking because oil burns at high heat and creates bitter compounds instead of enhancing crispness.timing30-60 seconds
  • Use metal skewers preheated for 1-2 minutes as they conduct heat into the center of the kebab, ensuring even cooking of the beef filling.equipment1-2 minutes preheat
  • Cut tortillas into uniform 2-3 inch squares because consistent sizing ensures even heat distribution and prevents some pieces from burning while others undercook.technique2-3 inch squares
