💡 Pro Tips

  • Chill your chicken-egg mixture for 15-20 minutes before flattening to firm up proteins and prevent tearing when folding the calzone.timing15-20 minutes
  • Roll the chicken mixture between two sheets of parchment to achieve uniform 1/4-inch thickness, which ensures even cooking and prevents soggy centers.technique1/4-inch thickness
  • Leave a 1-inch border when adding fillings and don't exceed 3/4 cup total filling to prevent bursting during air frying as steam builds pressure.technique1-inch border, 3/4 cup max
  • Brush the sealed edges with beaten egg white before air frying to create a protein seal that prevents filling leakage at 400°F.technique400°F
  • Flip the calzone halfway through cooking (at 6-7 minutes) to ensure both sides reach the optimal 165°F internal temperature for food safety.timing6-7 minutes, 165°F
