💡 Pro Tips

  • Mix your muffin batter exactly 12-15 gentle folds to prevent gluten overdevelopment, which creates tough, dense muffins instead of tender crumb.technique12-15 folds
  • Your milk should be at room temperature (18-20°C) because cold milk will cause the batter to seize and create uneven mixing with the fats.ingredient18-20°C
  • Fill muffin cups exactly 2/3 full (about 75g batter per standard cup) to achieve proper dome height without overflow or flat tops.technique2/3 full, 75g per cup
  • Toast your desiccated coconut in a dry pan for 2-3 minutes at medium heat to intensify flavor compounds and add textural contrast.ingredient2-3 minutes, medium heat
  • Bake for exactly 18-22 minutes until internal temperature reaches 95-98°C - overbaking past this point rapidly dries out the crumb due to continued moisture evaporation.timing18-22 minutes, 95-98°C internal
